- 第1步.
ingredient family!!

- 第2步.
peel them

- 第3步.
cut the sweet potatoes into pieces(切滚刀块)

- 第4步.
heat the oil

- 第5步.
you can test the oil temperature with a piece of sweet potato,if the bubbles dance happily,then it's the right time to have a dancing party🤘🏼

- 第6步.
party time!

- 第7步.
stop the party at the right time,DO NOT wait for a looooong time. (like me,the upper one) Maybe fry for 5 minutes over medium heat until they can be punctured by chopsticks. remove and drain the oil for later use.( like the picute below)

- 第8步.
Here comes the MOST IMPORTANT step.(熬糖)I failed for 5 times, so I ran out of the soft sugar in my house..... oil: sugar=1:5, then use the slow fire(小火) stir in one direction, either clockwise or counterclockwise.

the syrup goes through the process of bulking and shrinking and darkening and thickening and drawing out of the filaments.( sounds complicated,never mind👀) 糖会先有大泡泡然后变成小泡泡,颜色变深然后粘稠,感觉差不多就用筷子试试能不能拉丝🙈🙉

- 第10步.
don't let the sugar burn(别熬过头,容易糊)

- 第11步.
stir in the sweet potatoes and coat with the syrup. Done,and this is my dish... Serve a bowl of water to keep your teeth clean👈

小贴士
Spread some sesame oil on the plate to prevent sticking.
