Supreme Sauce 是 Chicken Veloute 的二道酱(small sauce)。
Supreme Sauce 特级酱的食材和调料
| Chicken Veloute 鸡高汤酱 | 1 qt |
| Heavy cream 淡奶油 | 1 cup |
| Butter 黄油 | 2 oz |
| Lemon juice 柠檬汁 | 1/4 tsp |
| Sale 盐 | TT 适量 |
| White pepper 白胡椒粉 | TT 适量 |
Supreme Sauce 特级酱的做法与步骤
- 1.
Temper cream with the simmering veloute. Reduce until desired thickness is reached.将淡奶油加热至相同温度后倒入正在炖煮中的鸡高汤酱。然后继续煮至理想的稠度(NAPPE)。

Season with salt, pepper and lemon juice. 加盐,白胡椒粉和柠檬汁。
- 3.
Strain through a chinois. Reheat the sauce and add cold butter. 如有需要将酱汁再次过滤,重新加热后加入少许冷黄油让其融化混合。

* Pan-seared chicken tights with supreme sauce and sauteed vegtables. 将鸡大腿两面煎好,放入烤箱鸡肉温度达到165F后取出,切块放入铺好酱汁的盘中,再炒些蔬菜摆好。
