pork: oil & salt 220c-20mins 180c -40mins / kg

Cover the meat loosely with foil Rest :20 minutes

gravy: onion.Carrot.Celery.Garlic.Rosemary.Bay leaf. Spoon off any excess fat Scrape the bottom. on the hob: *red wine: reduced. * 2tsp jam Add flour stock: thickens-25-30mins season to teast.
