| Chicken bonea or chicken carcass | (raw or roasted) |
| 1-2 onion, unpeeled & quatered | |
| garlic, unpeeled | |
| 1-2 carrots, unpeeled & roughly chopped | |
| 2 celery, roughly chopped | |
| Herbs: fresh parsley & thyme & bay leaves | |
| 6 black peppercorn ,roughly crushed |

In a large pan Add all the ingredients Pour in enough cold water Boil & skim & simmer : for 30 min—1 hour—4 hours Sieve & freeze
