Serves 6

Tiramisu的食材和调料

3 egg whites
5 egg yolks
1/3 cup (70g) Granulated Sugar or caster sugar* vanilla
500g Mascarpone Cheese, softened
2 tbsp marsala(optional), or dark rum or kahlua or brandy or bailey
200ml cold espresso
savoiardi biscuits (lady fingers)
Cocoa Powder or grated dark chocolate

Tiramisu的做法与步骤

  1. 1.

    In a mixing bowl whip 3 egg whites: stiff. Or 250g heavy cream: stiff peaks.

  2. 2.

    In a mixing bowl (Bain Marie) Whisk 3-5egg yolks & 1/3 cup sugar : 8-10minutes-pale & voluminous (70c) cool. *Add vanilla Gradually fold in 250g(-500g )mascarpone fold in the egg whites or cream ( don't over mix)

  3. 3.

    To assemble Dip ladyfingers in coffee(alcohol&sugar) arrange in the bottom spread the mascarpone mixture repeat sprinkle sifted cocoa powder or grated dark chocolate

  4. 4.

    Cover & chill for 6 -24 hours before serving.
