Paella的做法说明

Serves 4

Paella的食材和调料

12 mussels, scrubbed, beards removed
12 raw prawns, shelled, deveined
100g white boneless fish, cubed
*100g calamari, cut into rings
4 chicken thighs(boneless), cut into cubes & season
(100 g chorizo, thinly sliced)
(4 slices pancetta, cut into small dice)
1 onion, finely diced
4 cloves garlic, crushed
1 red pepper, diced
2-4 tomatoes, de-seeded and dicedor 1/2 can chopped tomato
1/2 cup peas
1 cup paella rice
2 tbsp live oil
1/2 cup white wine
1 tsp smoked sweet paprika
1-2 saffron
2 cups chicken stock
2 tbsp finely chopped fresh parsley

Paella的做法与步骤

  1. 1.

    Heat 1/2 cup white wine in a large pan: high heat. Add the mussels: cover 3-5 minutes After 3 minutes, start removing the opened mussels and set asaide. At the end of 5 minutes discard any mussels that haven’t opened.

    paella pan: Heat 1tbsp olive oil chicken: 5 minutes-golden brown . Another 1 tbsp olive oil. (Chorizo & pancetta: crisp) Onion & pepper& garlic : softened. Add 1/2 cup peas & 2-4 tomatoes.

    Add the 1tsp paprika & 1 cup rice: coated Pour in 1/2 cup white wine: reduced Pour in 2cups chicken stock Add saffron : cook for 15 minutes.

  4. 4.

    Arrange seafood & peas. Cook gently :another 10 minutes. Sprinkled with parsley A wedge of lemon.
